Ramen gets a hot new street-food-inspired makeover in this elote-style dish.
Ingredients
- 16 ounces instant ramen noodles (around 4 packs)
- ½ cup mayonnaise
- 1 lime, juiced
- 1 (15-ounce) can golden sweet corn, drained
- Chili powder, for garnish
- Crumbled Cotija cheese, for garnish
Seasoning
- 1 tablespoon Lee Kum Kee Sriracha Chili Sauce
- Lee Kum Kee Sriracha Mayo Dressing / Spread, for drizzling
- Lee Kum Kee Chiu Chow Style Chili Crisp Oil, for drizzling
Preparation
- Bring a large pot of water to a boil. Add the ramen noodles and cook for 2 to 3 minutes or until cooked through. Drain, and transfer the noodles to a large bowl.
- To the noodles, add in the mayonnaise, lime juice, corn and Lee Kum Kee Sriracha Chili Sauce. Mix to combine.
- Plate the elote ramen and sprinkle with chili powder and Cotija cheese and drizzle with Lee Kum Kee Sriracha Mayo Dressing / Spread and Lee Kum Kee Chiu Chow Style Chili Crisp Oil. Enjoy!
